Battered Fish

serves 4

ingredients:

fish:

  • 4 cod fillets
  • 1 tsp salt
  • plain flour, for dusting

batter:

  • 170g plain flour
  • 1 tsp garlic granules
  • pinch of black pepper
  • 1 tsp salt
  • 1 egg, beaten
  • 330ml bottle of lager (or ½ tsp bread soda and 200ml soda water)
  • pinch of turmeric

frying:

  • vegetable oil, for frying

directions:

  1. pat dry the cod fillets with some kitchen roll. sprinkle each side with the salt. leave to the side for 10 mins while you prep the batter. the fish can be prepared a couple of hrs ahead of time and left in the fridge uncovered if needed. the batter should not be prepped ahead of time.

  2. add vegetable or sunflower oil to a large heavy pot, no more than ⅔ full, and heat to 180°C. always keep a small amount of oil leftover in case you need to quickly cool the hot oil.

  3. add the batter ingredients to a bowl and whisk together. the turmeric is just for colour so only add a tiny amount. start adding beer until the batter is just lighter than a pancake batter.

  4. coat the fish in flour and dip in the batter, then into the oil.

  5. fry each fillet for 6-8 mins. remove from the oil and season with flaky salt immediately.

  6. serve with chips, mushy peas and a lemon wedge.
