Chicken Nuggets
makes 18 nuggets
ingredients:
chicken:
- 500g chicken breast, minced
- 2 tsp salt
- 1 tsp sugar
- ½ tsp msg
light batter:
- 45g cornflour
- 240g water
dredge:
- 450g plain flour
- 22g salt
- ½ tsp msg
- 1 tsp white pepper
- 1 tsp celery salt
tempura batter:
- 75g cornflour
- 100g plain flour
- 1¼ tsp baking powder
- ¼ tsp bread soda
- 240g cold water
- 2 whisked eggs
frying:
- vegetable oil, for frying
directions:
mince the chicken in a mincer or a food processor. alternatively, buy chicken mince. add in the salt, sugar and msg and mix to combine. put in the fridge for 10 mins to allow it to firm up.
while you wait, add vegetable oil to a large pot and begin to heat it to 190°C.
in a bowl, make the light batter by mixing the cornflour and water.
in a large tray, mix together the dredge ingredients (flour, salt, msg, pepper, celery salt). whisk so that the ingredients are combined.
finally whisk together the tempura batter (everything else).
with wet hands, shape the chicken into small nuggets. dip in the light batter, coat in the dredge, and finally into the tempura batter.
fry in 190°C oil for 6 mins in batches. let the oil come back up to temperature between batches.
remove from the oil, drain on a rack and salt lightly.
