Marry Me Chicken Pasta

serves 4

ingredients:

chicken:

  • 600g chicken breast
  • 1 tbsp onion powder
  • 1 tbsp garlic granules
  • 1 tbsp dried oregano
  • 1 tbsp smoked paprika
  • 1 tsp mild chilli powder
  • 1½ tsp salt
  • 1 tsp black pepper
  • 1 tbsp olive oil

sauce:

  • 10g butter
  • 2 shallots, finely chopped
  • 3 cloves garlic, crushed
  • 1 tbsp tomato puree
  • 300ml chicken stock (or 1 stock cube in 300ml boiling water)
  • 100ml single cream
  • handful of basil, chopped

pasta:

  • 400g rigatoni

directions:

  1. coat the chicken breasts with the onion powder, garlic granules, oregano, smoked paprika, chilli powder, salt and pepper. heat the oil in a large pan on medium and cook the chicken for 3-4 mins each side until browned, then set aside. don't burn the pan as you want to retain the chicken fond.

  2. melt the butter in the same frying pan and fry the shallots and garlic for 5 mins until soft. stir in the tomato puree and cook on a high heat for 1 min.

  3. slice your chicken into strips.

  4. begin cooking the pasta in a large pot of salted water. you are aiming to cook to just al dente. reserve a ladle of pasta water before draining.

  5. add the stock, cream and sliced chicken. simmer with the lid off for 5 mins, until the chicken is 70°C inside.

  6. add the pasta to the sauce with the ladle of pasta water to heat it back up for a minute or 2, season to taste and take off the heat.

  7. toss with the chopped basil to serve.
