Pickling

makes 1 jar

ingredients:

brine:

  • 240g white vinegar
  • 240g water
  • 65g sugar
  • 30g table salt (about 1¾ tbsp)

to pickle:

  • choice of vegetables
  • choice of spices

directions:

  1. wash and slice your vegetables and add to a mason jar. add in other spices if using.

  2. add the vinegar, water, sugar, and salt to a saucepan and bring to a boil, simmer for 1 min. ensure the sugar and salt have dissolved, then let cool slightly and pour over the vegetables. do not pour boiling brine straight into the jar.

  3. the length of time required to pickle will vary based on how thick you sliced your vegetables. for very thinly sliced red onions, they would be ready in 1 hr, but up to 24 hrs for thicker slices.

keeps a month in the fridge, under the brine.

pickling inspiration:

vegetables add
200g red onions, thinly sliced 2 garlic cloves, 1 tsp peppercorns
300g carrots, thinly sliced 1 tsp grated ginger
400g cucumber, sliced into rounds 2 tbsp fresh dill, chopped
300g beetroot, thinly sliced zest of 1 orange, 4 cloves
250g radishes, thinly sliced 1 tsp chilli flakes, 1 tbsp fresh coriander, chopped
