Potato Salad
serves 4
ingredients:
- 600g potatoes
- 3 shallots, very finely diced
- 1 spring onion, finely sliced
dressing:
- 3 tbsp mayonnaise
- 3 tbsp extra-virgin olive oil
- 1 tbsp white wine vinegar
- 1 tbsp dijon mustard
- 1 tsp salt (or to taste)
- ¼ tsp sugar (tiny pinch)
directions:
chop the potatoes into smallish chunks, don't cut them to the size you expect to see them in a potato salad, you will cut them again later. boil the potatoes in salted water to just barely done, enough that they would have a bit of bite if you bit into it. let them cool while you make the dressing.
mix the dressing ingredients together and whisk hard. start with the mayonnaise, mustard, salt and sugar, then add the oil and vinegar a little at a time. when fully mixed, the dressing should be quite vinegary, almost the flavour of salt and vinegar crisps.
when the potatoes are cooled, cut them into small cubes, you'll probably get 6-9 cubes out of each potato.
add to the dressing and then add the shallot and spring onion, and toss them by hand. season to taste once more, you'll probably need another ½ tsp or so more salt.
