Steak & Guinness Pie

serves 4

ingredients:

stew:

  • vegetable oil, for frying
  • 1kg stewing beef
  • 1 onion, chopped
  • 4-5 mushrooms
  • 3 cloves garlic
  • 1 tbsp tomato puree
  • 1 tbsp plain flour
  • 1 tbsp fish sauce
  • 1 tbsp white wine vinegar
  • 1 tbsp butter
  • 2 carrots, roughly chopped
  • 2 celery sticks, roughly chopped
  • 1 sprig rosemary
  • 1 bay leaf
  • 1 can of guinness
  • 1 beef stock cube

pastry:

  • 1 sheet puff pastry
  • butter for the dish
  • egg wash (1 egg, 1 tbsp milk)

directions:

  1. heat oil in a large pot, brown the meat in batches. season and remove and set aside.

  2. add another drop of oil and fry the onion for a few mins until it begins to go translucent.

  3. in another pot, begin cooking the mushrooms until crispy, seasoning to taste.

  4. back in the pot with the onion, add in the garlic and tomato puree and cook for a few mins. add the flour and again, cook for 2-3 mins.

  5. add the fish sauce and white wine vinegar and turn up the heat to medium-high until most of the liquid has evaporated.

  6. add the butter, carrots, celery, mushrooms, rosemary, bay leaf, the steak pieces and the can of guinness, and stock cube. season again to taste. bring to a simmer, then drop the heat to low so that it simmers gently for about 2 hrs, adding in water occasionally if it gets too thick.

  7. heat your oven to 200°C. fill with the stew, and top with puff pastry. brush with egg wash and cut a cross in the top to let steam out. bake for 25-30 mins, until the pastry is a golden colour.
