Tortillas

makes 10 tortillas

  1. mix all dry ingredients well in a mixing bowl.

  2. soften the butter in a microwave for about 10 seconds or so. add the butter into the flour mix, and mix with your hands until it makes a fine crumb mix. alternatively blitz together in a food processor.

  3. add the hot water gradually and mix with your hands. add water as needed until it becomes a sticky ball that pulls away from the sides of the bowl.

  4. knead for 5 mins just until it becomes a soft dough. break off 10 golf-ball-sized dough balls. lightly oil a baking sheet and place your dough balls onto it. lightly oil the balls and cover with a sheet of cling film. leave to rest for 30 mins.

  5. preheat a cast iron pan or other nonstick pan on medium high. roll out the tortilla into a very thin disc. the process is: roll the dough ball with a rolling pin, rotate it 90 degrees and roll again, continue until it is almost transparent. cook on a very hot pan (no oil) for 20-30 seconds until bubbles form, then flip and cook for another 20 seconds.

  6. stack tortillas under a tea towel to keep them from drying out.
