Blueberry Muffins
makes 12 muffins
ingredients:
dry:
- 260g plain flour
- 2 tsp baking powder
- ¾ tsp salt
wet:
- 110g soft unsalted butter
- 225g sugar
- 2 large eggs
- 1½ tsp vanilla extract
- ¼ tsp almond extract
- 125g milk
to finish:
- 250g blueberries
- 2 tbsp demerara sugar (or brown sugar)
directions:
preheat your oven to 190°C. whisk flour, baking powder and salt.
cream the butter and sugar in a separate bowl until light and fluffy.
beat in 2 large eggs one at a time into sugar and butter mix.
add vanilla and almond extract to the wet mix.
gradually add milk and flour mix into the wet mix alternating between each. don't fully mix at the end as you'll need to add the blueberries next.
fold in blueberries. make sure not to overmix.
spoon into a muffin tray lined with muffin cases and sprinkle on top with demerara sugar. bake for 25 mins at 190°C, until 93°C inside.
notes:
frozen blueberries also work in this recipe without being thawed. toss them in a spoon of the flour first so they don't sink.
