Buttermilk Chicken Burgers
makes 4-6 burgers
ingredients:
marinade:
- 300ml buttermilk
- 1¼ tsp salt
- 1 tbsp garlic granules
- 1 tsp cayenne
chicken:
- 4-6 boneless skinless chicken thighs
coating:
- 400g plain flour
- 2½ tsp salt
- 1½ tsp smoked paprika
- 1 tbsp garlic granules
- 1 tsp black pepper
- 1 tsp cayenne
frying:
- vegetable oil, for frying
directions:
add the marinade ingredients in a large bowl and mix. add in the chicken and leave in the fridge for at least 1 hr, ideally 4 hrs or overnight.
heat up a pot of vegetable oil (no more than ⅔ full) to 175°C.
whisk together the flour, salt, paprika, garlic granules, black pepper and cayenne and place in a large tray. add a few drizzles of the marinade into it to create some lumps.
drop the chicken into the flour mix and press in firmly. shake off any excess flour and lower into the oil. cook in batches allowing the temperature to rise again between batches.
the chicken should be cooked in 8 mins (aiming for 75 to 80°C internal temperature). drain on a rack and season with salt while hot.
serve in a bun with pickled gherkin and spicy mayo.
