Chicken Burgers
makes 4 burgers
ingredients:
chicken:
- 4 chicken breasts
- ½ tsp salt
breadcrumb mix:
- 150g breadcrumbs or panko
- 1 tsp salt
- 1 tsp pepper
- 1 tsp onion salt
- 2 tsp paprika
- 1 tsp garlic granules
- ½ tsp dried parsley
- ½ tsp msg
egg wash:
- 2 large eggs
- a dash of hot sauce (optional)
flour:
- plain flour, for dusting
directions:
preheat your oven to 220°C. pat dry the chicken breasts with kitchen roll and flatten them to an even thickness with your palm. season with salt.
whisk the eggs and leave to the side. you can optionally add some hot sauce to the egg mix to make slightly spicier burgers. prepare the breadcrumb mix in another bowl.
coat the chicken in flour, then add to the egg mix, then transfer to breadcrumbs mix and coat again. if using panko breadcrumbs, be sure to mix the spices well each time you coat as they tend to fall to the bottom of the bowl.
place on an oiled wire rack over a tray and spray the tops with oil. cook for roughly 20 mins at 220°C until the internal temperature is 70°C. if cooking in an air fryer at 220°C the time will be reduced to closer to 15 mins.
serve on a bun with lettuce, mayo and gherkin.
