Chicken Fried Rice
serves 4
ingredients:
rice:
- 250g basmati rice
stir-fry:
- 1 tbsp vegetable oil
- 2 chicken breasts
- 2 spring onions, chopped
- 1 carrot, cut into thin strips
- 50g sweetcorn
- 40g frozen peas
- 2 cloves garlic, minced
- 1cm ginger, grated (1 tsp)
- 1 egg
sauce:
- 1 tsp chilli flakes
- 1 tbsp light soy sauce
- 1 tsp dark soy sauce
- 1 tbsp fish sauce
- ½ tsp msg (optional)
- 2 tsp sesame oil
directions:
cook the rice, and set aside to cool. leftover rice from the night before works best in this recipe.
cut the chicken into strips and season. fry in the oil on medium-high heat until just cooked through (about 5 mins) and set aside.
fry the spring onion, carrot, sweetcorn and peas in the pan on medium heat for 5 mins. add in the garlic and ginger and cook for 2 mins until fragrant.
turn the heat up to high. add the soy sauces and fish sauce to the edge of the pan and let them sizzle for a few seconds, then add in the rice and the chicken, chilli flakes, msg and sesame oil. toss until everything is hot.
make room in the pan, crack in the egg, let it cook for a min and then scramble it through the rice. season with salt and pepper to taste.
