Ice Cream Sandwiches

makes 6 sandwiches

ingredients:

dry:

  • 70g plain flour
  • ¼ tsp salt
  • ¼ tsp bread soda
  • 40g sifted cocoa powder

wet:

  • 45g unsalted butter, softened
  • 50g sugar
  • 25g light brown sugar
  • ½ tsp vanilla extract
  • 80g whole milk, at room temperature

to finish:

  • 1 block of vanilla ice cream

directions:

  1. preheat the oven to 175°C. whisk flour, salt, bread soda, cocoa powder.

  2. separately beat butter, sugars and vanilla extract into a smooth paste.

  3. combine both mixes with the milk. scoop out 12 balls, slightly smaller than a table tennis ball onto a sheet of baking paper (on a tray) which has been sprayed with oil. you can use a wetted finger to press down any spikes sticking out to make them more spherical.

  4. bake in the centre of the oven for 9-10 mins. remove from the oven and tap the baking tray on the counter a few times to knock the cookies flat.

  5. let them cool to room temp (15 mins). when cool, transfer the baking sheet into the freezer for 15 mins.

  6. remove from the freezer and poke 10 or 12 holes in the surface of each cookie with a toothpick to give them the traditional look.

  7. cut out a block of ice cream to the same shape as the cookie and create a sandwich.

  8. they can be eaten straight away but are better if wrapped in cling film and put back in the freezer for a few hrs.
