Superjuice

directions:

   peel the fruit and weigh the peels.

2. 2

   toss the peels with the citric and malic acid in a container and leave for 1-2 hrs.

3. 3

   add the water, using it to rinse out the container first.

4. 4

   squeeze the juice of the peeled fruit in too. blend the whole thing, then strain through a cloth, squeezing the cloth. for big batches, use a potato ricer.
