Simple Syrup
makes 1 small jar
ingredients:
- 200g sugar
- 200g water
directions:
warm the sugar and water in a small pan, stirring, until the sugar dissolves. it doesn't need to boil.
let it cool, then keep it in a clean jar in the fridge for up to a month.
notes:
1:1 by weight. i usually make it double sugar instead: 400g sugar to 200g water. at 2:1 it is shelf stable, so it keeps in a sealed jar in the cupboard, not the fridge. it is sweeter, so use about three-quarters as much in a drink (30ml where a recipe says 40ml).
