Marinara Sauce
serves 4
ingredients:
- 8 tbsp olive oil
- 1 onion, finely diced
- 1 stick celery, finely diced
- 4 cloves garlic, minced
- 2 tsp sugar
- 1 tsp salt
- 1 tbsp fish sauce
- 1 tsp white wine vinegar
- ½ tsp dried italian herbs
- pinch of chilli flakes
- 1 tbsp tomato puree
- 2 x 400g tins whole tomatoes
- 100ml water, or as needed
directions:
place olive oil, onion, celery, and a pinch of salt into a large heavy saucepan over medium-low heat. cook until onions are very soft, about 15 mins, stirring occasionally.
mix in garlic and cook just until fragrant, about 1 more min.
mix sugar, salt, fish sauce, white wine vinegar, italian herbs, and chilli flakes into the mixture. raise heat to medium and cook just until liquid has evaporated. stir in tomato puree and bring to a simmer.
pour in the tins of tomatoes and their juice and break up the tomatoes with a wooden spoon. alternatively you can pre-crush the tomatoes by hand in another bowl to be really authentic.
bring sauce to a simmer, turn heat to low, and simmer for about 90 mins, adding a little water as the sauce cooks down. stir occasionally.
