Sweet Chilli Sauce
makes 1 jar
ingredients:
sauce:
- 130g rice vinegar
- 175g water
- 115g sugar
- 5 cloves garlic, minced
- 1½ tsp fish sauce (or soy)
- ½ tsp cayenne powder
chilli:
- 60g sambal oelek (or 2 tsp chilli flakes)
to thicken:
- 4 tsp cornflour (10g)
- 2 tbsp water
directions:
add the vinegar, water, sugar, garlic cloves, fish/soy sauce, and cayenne into a pot. if using dried chilli instead of sambal oelek, add it also.
heat over medium heat while stirring to dissolve the sugar. increase the heat to medium-high and bring it to a boil. let it simmer for about 2 mins. add the sambal oelek and mix through.
let it cook for a few mins until it's slightly thickened (4-5 mins). mix cornflour with a small amount of water to dissolve and then add to the sauce and simmer for a min until glossy.
allow to cool to room temp and store in the fridge.
notes:
keeps for a month in the fridge.
